Easy, Versitile Recipe: Too Tired To Cook Black Bean Dish

As moms, we need a store of easy recipes for those nights when we're just too tired to do much in the kitchen. And during the Christmas season, we may especially need those recipes! Here's one I was given by a nutritionist when I had gestational diabetes; it's healthy and easy. The leftovers are delicious, too. And if you can, double the recipe and freeze some.

It's quite versatile; call it a chili, if you like, or add some tortilla chips and put it in the oven for a casserole.



What You'll Need:

1 tablespoon olive oil
1 cup chopped onion
2 garlic cloves, minced
1 can (14 oz.) crushed tomatoes in puree
1/2 to 1 cup of salsa (depending upon your tastes)
3/4 cup chopped cilantro
1 teaspoon chili powder
1/2 teaspoon dried cumin
1/2 teaspoon oregano
pepper
2 cans (15 oz. each) black beans
2 - 3 cups cooked chicken breast or lean ground beef
grated low fat cheddar cheese
low fat sour cream


How to Do It:

In a large skillet, heat oil. And add onion and garlic, sauteing until tender, about 5 minutes. Add tomatoes, salsa, cilantro, and spices, stirring well. Stir in beans and chicken or hamburger. Cook through, allowing the mixture to simmer for at least 20 minutes and up to an hour. Before serving, sprinkle cheddar on top and add a small spoon of sour cream, if desired.

Or, if you prefer, move the bean mixture to a casserole dish after mixing, top with a few tortilla chips and sprinkle with cheese. Bake for about 30 minutes.
